Cherry cheesecake French toast

I'm about to become your new BFF. Let me introduce you to a breakfast dish that's halfway to being dessert. Oooooh yeah! And, get ready for this........it's made with booze. You heard me right. B-O-O-Z-E. Now you can justify not clearing away the alcohol from your party the night before. Anyways, let's get down to business.

In large shallow bowl, whisk together 3 eggs, 2/3 cup milk, 1T cream, and 1/2 tsp almond extract. In another bowl, mix together 1/3 cup light softened cream cheese and 2T amaretto. Do a shot of amaretto. Spread 4 slices of bread (whatever kind you have - I used 12 grain; the recipe suggests egg bread or French bread) with cream cheese mixture and 4 slices with cherry jam. I used the PC black label sour cherry spread shown below. Sandwich the cherry slices with the cheese slices, pressing firmly. Do another shot of amaretto. Dip in egg batter then fry in a dry pan over medium heat for 3-4 minutes per side, until golden brown. Sprinkle with icing sugar and serve with fresh fruit.
